CINNAMON RICOTTA PUDDING

Suitable for diet steps one, two and three; counts as a no-carb food and can be eaten as a dessert or a snack.
4 oz low fat or non-fat ricotta cheese
1 tablespoon non-fat sour cream
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon 
1 -2 packet Stevia mixed with non-fat half-and-half cream

Mix together the ricotta, sour cream, vanilla extract, cinnamon and Stevia in a dessert bowl. Chill and top with cream before serving. One serving.
