LOW CARB QUICHE
1 tablespoon butter
1/2 medium onion,
8 oz sliced mushrooms
6 oz diced fresh broccoli florets
8 fl oz. non-fat half-and-half
4 oz grated low-fat cheddar
Salt and pepper
6 eggs, beaten
Preheat the oven to 325 F. Spray the bottom and sides of a 9-inch pie dish with cooking oil spray. Melt the butter in a frying pan and sauté the diced onion, mushrooms and broccoli until soft. In a medium saucepan, heat the cream until hot; do not boil. Remove from the heat and stir in the cheddar cheese until it melts. Add the sautéed mushrooms, broccoli, salt and pepper to the melted cheese mixture and let cool for 5 minutes. Add the beaten eggs and mix well. Pour into the prepared pie dish and bake for 45 to 50 minutes, until the custard is set, or a knife inserted in the center of the quiche comes out clean. Cool on a rack for at least 5 minutes before slicing.
